Strawberry Cornmeal Muffins

we bring in almost every day more than a dozen strawberries




I added a teaspoon of vanilla


PLEASE don't look at my old muffin tin

I filled them almost to the top I believe "more is better" ;)



sprinkle with icing sugar


Strawberry Cornmeal Muffins
1 cup cornmeal
1 cup flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
1/4 cup oil
1 cup milk
1 cup diced strawberries, plus 1/2 cup for garnish

In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
 Add beaten egg, oil and milk, stirring until just combined. Fold in 1 cup diced strawberries

Fill muffin cups 3/4 full, then garnish with a few chopped berries.
 Bake at 400F (200C) for 20-25 minutes or until testing done.

Allow the muffins to cool before removing from the muffin tin. Run a sharp knife around the edge of each muffin before popping out of tin. 
Sprinkle with icing sugar, before serving.

  5. obrigada Patricia e Ilídia, são uma delicia estes "muffins" fiz hoje de manha......o meu marido ao chegar a casa comeu logo 4, e declarou ser o melhor muffin que já tinha comido !!!(ele adora morangos, por isso gostou), acho giro pois amanha tinha destinado fazer um "CRISP de morango", estamos em sintonia de novo, verdade seja dita, tenho emensos morangos,e acho um pecado, não usar :) jinhos, Diana
