Puff Pastry Hearts

These are easy and simple to make.  Beautiful and so delicious,  a puff pastry heart filled with  whipped cream and strawberry jam.  They are the perfect little treat to make for your Valentine! Ingredients: 1 sheet of puff pastry 1 Egg  ( for egg-wash ) 1-2 tbsp of sugar 1 cup of whipping cream 1-2 tbsp of icing sugar or more to taste  Strawberry Jam more icing sugar for topping Directions: Preheat your oven to 425 F or 220C.  Unroll  pastry sheet and cut out hearts/ or squares Prick each heart with a fork and then brush  the hearts with the beaten egg, sprinkle with sugar.  Place the hearts on a baking sheet lined with parchment paper and bake in your oven for 12/15 minutes  or until they are risen and turn golden, allow them to cool. Margarita Cupcakes

Who says you can't have your margarita and eat it too? Can you think of a better way to celebrate Cinco de Mayo, than with a Margarita Cupcake?!  These  yummy lime cupcakes are topped with a tequila lime buttercream frosting packed with flavor and they are perfect for your fiesta! You can have your drink and your dessert all in one! Ingredients For the cupcakes: 1 box white cake mix 3 egg whites 2 Tbs vegetable oil 1.5 oz triple sec 2 oz tequila of your choosing 7 oz lime juice zest of 1 lime For the frosting: 1  1/2 sticks butter (12 Tbs) 4-5 cups confectioners sugar 1 Tbs tequila 1 Tbs lime juice zest of one lime lime slices for garnish (optional) Preheat oven to 180/350 degrees.  Line cupcake tins with cupcake papers. In a large bowl, prepare batter according to package directions substituting the 1 1/3 cup water with triple sec, tequila and lime juice.  Add lime zest.  Mix well.  Pour into cupcake tins, filling about ...

Vanilla Bean Buttercream

This buttercream is so light-and-fluffy, with a delicate vanilla flavor. I love the look of all the little specks of vanilla bean. So pretty. So simple. So good. Let´s not forget delicous, I swear you will want to eat it by the spoonful. I have no doubt it will become a favourite recipe, for frosting your cakes and cupcakes! 1 cup salted butter, softened 2 vanilla beans (seeded) OR 1 Tbsp. vanilla bean paste 2 teaspoons pure vanilla extract 4 cups powdered sugar 3-5 Tbsp. heavy cream (or milk if you don't have cream) Using a stand mixer, cream together the butter, vanilla bean paste (or the scrapings from 2 beans*), and the vanilla extract with the paddle attachment, scraping down the sides as necessary, continue mixing until it's smooth. Add in the powdered sugar, one cup at a time until it's all incorporated and moist. The mixture will be stiff.
