Smoked Salmon Pasta

This is one of those easy~peasy ones. The most difficult part is boiling the water for the pasta...see easy ! I just used what I had in the pantry, and in the fridge. It was yummy, and well liked by the little's, our youngest, after eating 3 bowls, requested, I make it more often ! Bring to a boil a pot of salted water, cook your PASTA of choice. Once cooked, drain the pasta,return to the pot. Now into the pot, add in a small bag of FROZEN BABY PEAS , add in a small carton 200ml of CREAM , and add in a package of  chopped SMOKED SALMON. Gently toss everything together, and adjust any seasonings, salt, pepper, I think dill, would be great in this. Add some cheese if you like, some grated Parmesean.  See easy~peasy ! xo, Diana

Smoked Salmon and Goat Cheese Pizza

This is one of our favorites at our table, even the kids love it. It´s quick and easy and DELICIOUS !! Smoked Salmon and Goat Cheese Pizza pizza dough ~~ home made or store bought 1 package of smoked salmon 1 tub of sour cream ( you won't use all of it) 1 package goat cheese (the package with 2 rounds) chives, black pepper & salt (if you like) Heat your oven up, really hot, as high as it will go, trust me, good pizza needs good heat. Flaten out your pizza dough, on a floured pizza pan or cookie sheet. Spread a nice thick layer of sour cream on top. Next, add strips/pieces of the smoked salmon, and cubes of the goat cheese. Sprinkle chopped chives on top, and season with black pepper, and salt if you wish (the salmon and goat cheese are quite salty, so adjust to your liking) Next, bake in the oven for about 15-20 minutes. notes: When done, slice, and drizzle with some olive oil, and shred some parmesan cheese on top,,, I also bet a drizzle of balsamic vinegar...

Salmon and Spinach Tarts

With the holidays quickly approaching, I think this wonderful 4 ingredient recipe, is perfect for entertaining. I made them this morning, to give them a test run, it took about 30 minutes to put together, and my hubby  offical taste tester, said they were great. I loved them too, and the fact that all the ingredients, you can have on hand, is great, for any surprise visitors. Salmon and Spinach Tarts   from here Ingredients 375g pack fresh ready-rolled puff pastry 150g young leaf spinach  ( I used frozen, thawed) 200g tub light cream cheese ( I used flavored regular cream cheese) 100g smoked salmon  How to make salmon and cream cheese tarts 1. Preheat the oven to 200°C/fan180°C/gas 6. Unroll puff pastry, cut into 2 x 15cm circles (I cut into squares)  and place on a baking sheet.
