This peanut butter tart, is heaven on a plate! It's decadent, sweet, creamy, and easy to make. It is love at first bite, in fact it's so delicious you will be tempted to eat the whole pie...I won´t judge you if you do! Crust 2 cups cookie crumbs ( I like digestive cookies, but Marie cookies work also) 2 tablespoons granulated sugar 1/4 teaspoon coarse or kosher salt 3 tablespoons unsalted butter, melted ( more if needed, and I like salted butter) Filling 1 cup cream cheese, softened 4 tablespoons butter, softened 2/3 cup  powdered  sugar 1 cup creamy peanut butter 1/4 teaspoon coarse salt 1 teaspoon vanilla extract Topping 1 cup ( or 170 grams) semisweet chocolate chips A pinch of salt 1/2 cup (120 ml) heavy cream Flaky sea salt, to finish (optional) Make the crust: Heat oven to 350°F (180C).  After four months of sharing the house with the kiddos, and Mr.G on his vacation....I finally have the house to myself! Ok, Luna and I have the house to ourselves. So what did I do with a whole day left to my own devices, I would like to say it was super exciting, but it really wasn't. First part of the day. I cleaned...yup you read that correctly..I cleaned.  These Peanut Butter Bars couldn’t be easier, with only 5 ingredients and no-baking, the hardest part is waiting for them to chill in the fridge. Oh and lets not forget.... they are really delicious too. Is there anything better than peanut butter and chocolate together? My kiddos, Sara and Simon, actually made them, they are perfect for little hands to help with! Christmas is just around the corner, and these are perfect for your cookie plate, of for sharing as a gift. Oatmeal Peanut Butter Cookies

The kids started their Easter break today, it's hard to believe that two semesters of school are already finished. Now I don´t know if this first day went exactly as they had hoped, but it had to be done, I made them clean their rooms! You know, a real spring clean, the kind where you purge out a couple of garbage bags worth of stuff. It actually went really well, everyone was on the same page, so the team work really paid off. I am really proud of them, they all did a great job, so to thank them, we baked cookies this afternoon. These peanut butter oatmeal cookies are super delicious. They are soft, chewy and perfect! I added in some M&M's only because I had them, chocolate chips would be great, some nuts and perhaps some cranberries too. I made this trifle many times this summer...and it was such a hit! An empty trifle bowl every single time! It has such lovely flavors, the apple filling, the peanut butter, and the silkiness of the cream cheese. All of these things and the fact that it is a no bake dessert, make it a keeper. This weekend a sweet friend asked for the recipe, and I realized it was not yet on the blog. Banana Peanut Butter Smoothie

This smoothie is just right for a hot summer day! It has been really hot and muggy the last couple of days on the island. These are yummy, and refreshing at the same time. My kids love them, even our oldest who doesn't much care for bananas. If you get a chance, slice and freeze your bananas, makes this even thicker! The milk you use is up to you, we use skim, you could even use almond milk or soy milk. Want to make it extra special add some cocoa powder or chocolate syrup !   4-6 baby bananas, broken into chunks ( or frozen slices) 2 cups milk ( your choice, skim, soy, almond) 1/4 to 1/2 cup peanut butter ( I have used as little as 2 Tablespoons 2 cups ice cubes *** add some honey for sweetness OR chocolate syrup OR cocoa Place bananas, milk, peanut butter, and ice cubes in a blender; blend until smooth .

Yesterday,I had my wonderful girlfriends over for lunch. I am blessed to know these fantastic women. I love our lunches, they start early, and almost always run late into the evening. There is always incredible food, chilled Rosé, lots of conversation, some tears, and plenty of laughter. It is a great pleasure to cook for them. I found this recipe a couple of weeks ago, and knew as soon as I saw it, I wanted to make it for our the next time we had lunch together. It is divine, creamy, rich, delicious ! Considering, today is the very first day Lent, these were perhaps something I should not have made today in my kitchen. But you know what they say about the flesh being weak, it is true. These are so over the top, in taste, my husband Mr.G a confirmed peanut butter cup addict, loved them, and my kids, well they are still jumping around, from the sugar high ! I did not make these "mini" as the orginal recipe suggest's, I made them in a regular, muffin tin of 12, I figure, bigger is better. They are really easy to make, which may prove to be a real problem. If, perhaps you are observing Lent, it was not my intention to tempt you in any way, you can always wait out the 40 days, and then make them....Good Luck with that !
