Jam Sessions

Well September snuck in somehow, very quietly, on it's tiptoes. It's very hard to believe that this time next week, my little's will be back to school. We have had a wonderful summer, lot's of swimming, many long lazy days, and glorious sunny weather. In the last couple of days, there seems to have been a shift somewhere, the weather is much cooler, the mornings are crisp, and the nights have become much shorter. At every corner, we are now reminded that kids are going back to school, the flyers in the mailbox affirm this. So now fall lingers just around the corner, and a sure full sign of this is the harvest. All the corn fields around our home have been cut down, giving way to mountains of covered silage. In the vineyards grapes are being picked to make next years wine. In our own gardens, the grape arbor this year, was amazing, producing endless amounts of white table grapes. We have picked most of them now, atleast the one's the birds didn't get too. Blackbe...

Chocolate Dipped Figs with Sea Salt

Image
These are such a luxurious treat, made with three simple ingredients ! Dried figs, chocolate and sea salt, are a match made in heaven. Making this a wonderful combination for your taste buds. The contrast between salty and sweet is amazing. They are so elegant looking, and would make such a lovely gift. So impressive and yet so easy, I really hope you give them a try. 100g chocolate (70% dark was used here) 12 dried figs 1 teaspoon coarse sea salt (Maldon is what I used) Break or cut the chocolate bar into pieces and melt over a water bath.  Gently mold each fig back into its natural shape if it's been tightly packaged. Holding by the stem, dip each fig in melted chocolate and transfer to a parchment-lined baking sheet. Sprinkle with sea salt while the chocolate is still liquid. recipe source

Fig Crostata

Image
Something's are best not messed around with and just left simple. Figs are so perfect , they really do not need much to jazz them up. Some figs, a bit of flour, a touch of sugar, a pinch of cinnamon, and a store bought pastry crust.....and voilá....a fig crostata. Fig Crostata 1 store bought pastry crust 12 figs ( give of take) 2 tablespoons of flour 6 tablespoons of sugar cinnamon to taste some milk sugar for sprinkling Pre heat oven to 200º Open up the pastry crust, place on a cookie sheet, leaving the parchment paper underneath. Slice the figs, next mix with the flour, sugar, and cinnamon. Lightly coat, arrange the figs on top of the pastry, leaving a border all around the fruit. Turn over the sides of the pastry. Lightly brush the pastry, with some milk, and sprinkle with sugar. Bake for about 40 minutes, till golden, and figs are bubbly. xo, Diana
