Greek Yogurt Onion Dip

Image
This Onion Dip is creamy and decadent, and oh so easy to make. The best part is that it is made with greek yogurt, it's a fabulous substitute for so many recipes made with mayo or sour cream. So consider this a “lighter” version of the classic Onion Dip. I  recommend making a double batch if you’re making it for a party, because it will disappear in a snap!   In a bowl mix one packet of  Onion soup mix into 2 cups Greek yogurt. Thats it ! **I like to grind up the soup mix into a powder, in my food processor.

Tomato, Goat Cheese & Onion Tart

Image
Well the month of August has already snuck in, and I have to say it tugs at my heart, somehow I feel like summer is slipping away. One look at the vegetable garden, confirms this, the tomatoes are here in full force. While everything else has already been picked, the onions, the green beans, the potatoes. The lettuce is starting to go to seed, and all the peppers and pumpkins are now waiting for their turn to shine, once this month rolls into September. So in effort to hold on to summer, I made this lovely tart for lunch today. It´s fresh and fragrant and simple to make. 1 package puff pastry 3-4 tablespoons breadcrumbs 1 small onion thinly sliced 3-4 tomatoes thinly sliced 200 grams goat cheese or feta or mozzarella olive oil thyme or basil Preheat oven 200ºC Unfold the sheet of puff pastry onto a baking sheet lined with parchment paper. Sprinkle with the breadcrumbs. Layer with the thinly sliced onions. Next crumble and sprinkle half of the goat cheese on t...

Sweet & Spicy Cashew Chicken

Image
This was such a big hit when I made it for dinner ! Not a single cashew was left over ! It´s sweet and spicy and crunchy, every bite is delicious. I served it with some white rice, the perfect match. Next time I want to add some sugar peas for some extra crunch. I used only one pan to stir-fry everything, so there was little clean up. Plus it is such an easy recipe. And I always like easy. Don’t you? 1/2 cup chicken broth/ or water 3 tbsp oyster sauce 1 tbsp  brown sugar 1 tbsp  cornstarch 1 tbsp  white vinegar 4-5  boneless skinless chicken breasts, cut in chunks 1/4 tsp  salt 1/4 tsp pepper 2 sweet red peppers, chopped 2 onions, chopped 1 tsp  chili flakes  ( or to taste ) 1 cup  roasted cashews 3 green onions, chopped  about 1/4 oil for frying Whisk together chicken broth or water, oyster sauce,  brown sugar, cornstarch and vinegar; set aside. In wok or frying pan, heat some oil over...

French Onion Soup

Image
A little bowl of heaven this is, served piping hot, topped with  toasty bread and cheese  that is melted and bubbly.  This soup is perfect for when it's cold outside, and  you  just want to sit back and enjoy something warm and satisfying. It's a great comfort food. French onion soup is actually a very simple soup to make, it is a gourmet dish that anyone can prepare. Simple and frugal ingredients add up to one amazing dish! There are a billlion and one recipes for onion soup, some that cook all day....which I find daunting. I happened to like this one alot. The most important step, is caramelizing the onions, a nice low flame and some patience will do the trick. I hope you give it a try. ¼ cup unsalted butter 3 large onions, thinly sliced 2 dried bay leaves ½ tsp fresh thyme, chopped ( I used dry) 2 tbsp all purpose flour ½ cup red wine 1 tbsp balsamic vinegar 4 cups Beef Broth ½ tsp black pepper 1 baguette, 1/2...

Ramen Cabbage Salad

Image
DELICIOUS! Sweet, tangy and crisp. A very satisfying salad. So very easy to make, and oh so versatile. Everytime I make this salad, someone always asks for the recipe. It is fantastic for BBQ's and picnics, there is no mayo involved, so no worries about spoilage. You can add in any other veggies and nuts you like. Carrots, snow peas, almonds. Want to make it a complete meal, add in grilled chicken breast, or shrimp. You cannot mess this up. Win, win everytime ! I will be honest I almost always double the dressing, but have left it as a single dose. So as not to scare anyone, adding more dressing will be up to you ! 1 small head cabbage or 1 (16 ounce) bags coleslaw mix 3 green onions, sliced diagonally 2 (3 ounce) packages ramen noodles, with seasoning packet 1 small red pepper finely diced 1/2 cup vegetable oil 1/4 cup sugar 3 tablespoons white vinegar 1 packet seasoning mix Thinly slice the cabbage, add into a large bowl. Next add in the sliced ...

Red Onion Jam

Image
Oh the wonderful aroma, in my kitchen this morning........ I made some red onion jam, I do not know why I waited so long to make this. I just always thought it would be more complicated to make. But it isn´t,  I suppose the hardest part is the crying.......while slicing the onions. I used my mandoline, perhaps its cheating, but it  just makes it quicker. The jam was not even finished and I was already imagining some spread on a hamburger, or in a turkey sandwich. After placing this lovely ruby colored, sticky mixture into one little magical jar, I managed to save a little spoonful for moi. I had it on top of some Brie cheese ....I cannot tell a lie.......it was sooooo good. ingredients thinly slice the onions sauté in the olive oil for about 10 mins (please excuse this and the next 3 very crappy pictures, this camera, and heat do not mix well) add the brown sugar, salt, pepper, and thyme, cook and stir for about 15 mins. add in the vinegars...
