Puff Pastry Apple Rosettes

If you live on love Pinterest like I do, I am sure you have seen these dainty little pastries on there. They really are visually stunning, but even better is they are delicious. A combination of sweet, flakey and crunchy.  The sweetness comes mostly from the apple, making them a nice light dessert.  We thought they were best eaten warm , out of the oven, although they were still lovely at room temperature. Don’t be scared to bake these, they are really easy to make, I promise, pinky swear . 1 sheet Puff Pastry, thawed ½ lemon lemon juice 3 red apples, cored and sliced very thin ( I used pink lady)  appricot/peach preserves ( I used fig) cinnamon powdered sugar Preheat oven to 375º// 190c Spray muffin 6 muffin tins with cooking spray. Fill a medium bowl with water and squeeze the juice of ½ lemon into the water. Cut the apples in half and core. Slice very thin with a mandolin or knife. Overnight Oatmeal in Jars

 This is such a great and easy way to make breakfast! I have been making these all week long, and it has been a great big hit, Mr.G has really enjoyed them. Truth be told, I have too, shocking I know, as there is no butter, cream or chocolate in the recipe! All kidding aside, breakfast is a very, very important start to your day, and hello can we talk about Chia seeds ??! So good for you ( google it ) and so amazing in this, they poof up in the milk, and make it nice and thick. I love that it's so quick to put together, the night before, pop them in the fridge and in the morning, you have no excuse not to have breakfast. I made some during the week with blueberries, but my favorite has been with sliced bananas , kinda sorta tastes like a bananas foster, well kinda sorta... wink...wink ! Go on give them a try, I promise you will like them ! Ingredients ⅔ cup oatmeal (150ml) 1 tbsp chia seeds 1 tbsp brown sugar/ maple syrup/ sweetner of choice 1 tsp cinnamon 3/4--

Potato Gnocchi

 For dinner last night, I made some delicious home made gnocchi.  Can I just come out and say that, gnocchi makes me happy! They are like tiny soft, fluffy, billowy pillows, that hold sauce beautifully....I bet you just smiled! Gnocchi  is a small Italian pasta/dumpling, made with either potato, ricotta, or semolina. Traditionally made by hand by rolling the dough into ropes which are then cut into "pillows" and then each pillow is rolled onto a board to make ridges. These ridges can also be made by using a fork ( I filmed a little video, see below ), although you can just leave the little pillows be, the ridges help them absorb sauce. These are easy to make, just give yourself some time. No rushing, turn on the radio, pour yourself some wine, and be patient. The main ingredient in anything home made, is love, so no need to be perfect, for it to be delicious ! Ervilhas Guisadas Com Ovos Escalfados ( Braised Peas with Poached Eggs )

This is for me, one of my favorite Portuguese dishes, hands down, total comfort food ! It is the perfect combination of sweet peas, savory sausage, and poached eggs. Not convinced yet....there is also an amazing  sauce, perfect for soaking up with some bread. This is one of those portuguese dishes, where  mom´s or  grandmother´s "eye-balled"( or like I say used the force ) all the ingredients to produce a wonderful meal. I believe everyone who is Portuguese has "the " recipe for these, adding their own spin to it. This is the way I make it for my family, and yes I do " use the force ", but this time I actually measured out everything ! This is not complicated food, it is simple food, and simple is a beautiful thing! ¼ cup olive oil 1 linguiça or chouriço sausage ( portuguese), sliced 2 small onions, finely chopped 1 to 2 cloves garlic, finely chopped 3-4 bay leaves 7-9 whole allspice corns 1 cup plain tomato sauce 1 cup white wine 2 cups
