No-Bake Lemon Cheesecake

Image
If you’re looking for a dessert that is quick and easy to make, you should give this a try. It's light, lemony, sweet and tart! It's a great dessert for lemon lovers!  Now it is no-bake, but you do need to make it ahead of time, so it will set up. The lemon juice is what thickens and sets the cheesecake. I topped mine with a lemon curd , but many other toppings would be great too, blueberry, strawberry, or just some whipped cream! My family loved it, I hope your family will too! Crust 1 1/2 cups cookie crumbs (I use digestive cookies) 1/4 cup sugar 6 tablespoons butter, melted Filling 2 packages of cream cheese, softened 1 can  sweetened condensed milk 1/2 cup freshly squeezed lemon juice/ about 4 lemons (or lime juice) 1 tablespoon grated lemon peel 1 In a medium bowl, mix crust ingredients. Press evenly into ungreased 9-inch pie plate or a        springform pan, and chill in the fridge. 2 In large bowl, beat filling ingre...

Carrot Cupcakes with Cream Cheese Frosting

Image
These cupcakes are so moist and delicious, like eating a slice of carrot cake. I like to pretend the two cups of shredded carrots make them healthy.  Maybe if I called them muffins they would be healthier? I think if you omit the frosting, they are muffins ! The recipe only makes a dozen, so they are great for breakfast or an after school snack or a snack for you...while the kid's are at school ! In honor of Remembrance Day.....Lest We Forget For the muffins:  1 cup pecans 1 1/2 cups all-purpose flour, spooned and leveled 1 teaspoon ground cinnamon 1/2 teaspoon table salt or fine sea salt 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon ground nutmeg 1 cup packed dark brown sugar 1/2 cup canola oil ( I used butter) 1 large egg  2 cups  coarsely grated carrot For the frosting: 8 ounces bar cream cheese, at room temperature 4 tablespoons (1/2 stick) unsalted butter, at room temperature 1/2 teaspoon pure vanilla extr...

Bacon Wrapped Stuffed Jalapeno Peppers

Image
This recipe is so easy to make and it only consists of 3 ingredients; fresh jalapenos, cream cheese, and bacon. Did I tell you how delicious these are ? The jalapeno peppers are first sliced in half then seeded, stuffed with cream cheese, wrapped with bacon and grilled.  Seriously are you still with me, or did I loose you at "wrapped with bacon"?  These are such a great side dish to any meats you might be grilling, or a fantastic appetizer for a party. You really should wear gloves when slicing and seeding the jalapenos, because they can burn your hands. 20 jalapeno peppers, halved and seeded 1-2 boxes cream cheese, softened 1-2 packages  bacon, cut into halves  Halve and seed the jalapenos. Please wear rubber/latex gloves when doing this to prevent burns. Stuff each half with cream cheese and wrap with a half piece of bacon and secure with a toothpick.  Grill on the BBQ or cook in pre-heated oven at 350/180 until bacon in done. **You ...
