Chocolate Pecan Pie

I don’t know what it is about pecan pie, that just might make it one of my favorite desserts. It could be the  scrumptious sweet syrupy filling, or the buttery crunchy pecans, or the fact that both are married to a delicate, flaky crust. Indeed it could be all of these things, add in some chocolate, and how could anyone resist this pie. It's a homemade pie, that's sweet, simple and made for sharing ! 1 (9") pie shell , deep dish 3 eggs, slightly beaten 1 c. light corn syrup 1/2 c. sugar 2 tbsp. butter, melted 1 tsp. vanilla 1 c. chocolate chips 1 1/2 c. pecans In medium bowl stir eggs, syrup, sugar, butter and vanilla until well blended. Stir in chocolate chips and pecans. Pour into unbaked pie shell. Bake at  180//350 degrees for 40 to 50 minutes or until knife inserted half way between center and edge comes out clean. Cool on wire rack. Makes 1 (9") pie. *** for the longest time, pecans and corn syrup, could not be found in any of the grocery...

Lemon Tart

When life gives you lemons  a friend gives you lemons from their orchard, and another friend gives you fresh farm eggs, there is only one thing to do...BAKE ! Our weather has been so grey and feels like we haven't seen the sun in what feels like 40 days. I decided to bake some lemon tarts ! Six lovely little lemon tarts, bright and yellow, just like the sun ! Pastry: 1 1/2 cups (375 mL) all-purpose flour 3 tbsp (45 mL) granulated sugar 4 oz (125 g) unsalted butter, cut in cubes 1 egg yolk 2 tbsp (25 mL) lemon juice Filling: 3 eggs 3/4 cup (175 mL) granulated sugar 1/2 cup (125 mL) melted unsalted butter 1 tbsp (15 mL) grated lemon rind 1/2 cup (125 mL) lemon juice Garnish: 2 tbsp (25 mL) icing sugar 1. 100th post & a Strawberry Pie

I can hardly believe, it is already my 100th post ! How quick was that. I have had so much fun writing this blog, and all of you have been so kind, to take the time out of your day to stop in, and leave lovely comments. Thanks for all your visits. I hope so far, I have not bored you to bits, with , my rants of daily life, and my cooking. Today to celebrate, I made a strawberry pie, if you get a chance, do give it a try, it is so very good. here,if you wish you can add red food coloring Crumb Crust 2 cups cookie crumbs ( I use Maria tea cookies) 1/2 cup melted butter 1/3 cup sugar Process cookies, to make crumbs, in a bowl, add the melted butter,sugar and crumbs, Mix all together and press into a pie plate.
