Bread and Butter Pickles

A very sweet friend of mine, dropped of some cucumbers, from her garden. I decided I would make some bread and butter pickles. These are some of my favorite in a sandwich or with hamburgers. So what are bread and butter pickles ? They are sweet, not sour,  are ready to eat quickly, and do not require processing the jars, because they go directly into the fridge. I often use this brine with other veggies, like cauliflower, carrots and baby onions (these do not need to be salted and iced). Hope you give them a try.

3 little cucumbers
slice them up
dice up an onion
add 1/4 cup sea salt
mix everything up, and cover with lots of ICE, let set 4 hours



bring to a boil equal parts sugar and vinegar, and pickle spices
strain the cucumber and the onions
add to the pot of sugar and vinegar, and bring up to a boil again

one little jar of yummy pickles
you can use this brine to pickle other veggies too



Bread & Butter Pickles

3-4 cucumbers, sliced 1/4-inch thick
1 large sweet onion, thinly diced
1/4 cup sea salt
1-1/2 cups sugar
1-1/2 cups  vinegar
1 tablespoon mustard seeds
1 tablespoon coriander seeds (if ground, use 1 teaspoon)
1/4 teaspoon celery seed
 ( I used 3 tablespoons pickling spice, you can use spices to your liking )

In a medium bowl, combine the cucumbers, onion and salt.
Mix well.
 Cover the mixture with ice.
 Let stand at room temperature for 4 hours.
In a pot, bring sugar, vinegar and spices to a boil.
Drain cucumbers and onions.
 Add to vinegar mixture and bring  back to a boil.
Remove from heat and cool. You can store the pickles in an airtight container for up to three weeks in the fridge.
They will begin tasting pickled in just a couple hours.

  1. Não gosto de pepino ao natural, mas adoro em pickles. Costumo comprar na Base. Onde arranjaste as sementes? Já procurei cá, incluindo em lojas gourmet e nunca encontrei. Trouxeste-as do Canadá, não? Beijinhos

  3. My mom has always made her pickles at home, too, but we never called them anything special. Like Ilidia says the pickles spices are difficult to find here. She gets them from the States.
