White Chocolate & Mint Brownies

Oh my these are so decadent........My sweet friend Elvira has a very similar recipe, in her's you also add ground almonds. They too, are out of this world.  These are very creamy, almost like a cheese cake texture. They are alot easier to cut into bars, if they are really cold, almost frozen. After you have cut them into bars HIDE THEM, trust me, you will keep going back for just two one more. I added in the mint, just because I had bought some, you can omit the mint, and just make a White Chocolate Brownie. Either way, give them a try when you get a chance.


the ingredients


add butter and white chocolate into a bowl, melt both in the microwave

mix them together till smooth

pulse the sugar and mint together ( you can make these with out the mint, and skip this step)

pulse till its a fine "sand"

to the butter/chocolate mix, add the sugar and remaining ingredients

mix everything up

pour into a 13x9 pan, lined with buttered baking paper, bake in a 180/350º oven for 25-30 minutes

while the brownies bake, prepare a larger baking pan with ice in it. Trust me...this is to stop the brownie baking, and to cool it off

remove from oven, and place in the ice pan, for about 30 minutes or till cool to the touch

remove from the pan, and cut into bars, I found it easiest to cut with a pizza cutter, you could also freeze them, than cut them

White Chocolate & Mint Brownies

12 oz white chocolate, chopped or in chips (good quality chocolate)
1 cup of unsalted butter
3/4 cup ganulated sugar (I used all white, thats all I had)
3/4 cup light brown sugar
1 bunch of mint (about 50 leaves) optional
1/4 tsp salt
1 tbsp vanilla extract
4 large eggs
1- 1/2 cups of  flour

- Preheat oven to 180/350
- Line a pan with parchment and spray with cooking spray or butter it,
- On the stove or in a microwave melt butter, chocolate, 
 Whisk until smooth. 
Pulse the sugar and mint together.
 Add to the butter/chocolate mixture.
Whisk in the remaining ingredients.
-  Pour mixture into prepared pan.
- Bake for 25 minutes or until crust is entirely set.
-  On a sheet pan that is larger than the brownie pan spread ice in it.
- When brownies are set, remove from oven and place brownie pan onto ice.
- After 30 minutes allow brownies to cool for an additional 10-15 minutes in the refridgerator or freezer.
- Remove from the fridge or freezer, remove from baking pan, and cut into bars.
