Rosemary and Garlic Roasted Potatoes

These roast potatoes are yummy, crunchy on the outside with a tender inside, and with lots of flavor from the roasted rosemary and garlic. Sounds good, right? Oh..... and so very easy to make.



cut the potatoes in half,

then slice them again, you dont have to, but it gives you more side to get crispy ( remove any taters with spots)

add them to a bowl

next, smash up your garlic cloves, as many or as little as you like

add them to the potatoes ( remove the garlic skins, if it bothers you )

next add in you rosemary, rub off the little leaves through your fingers


next season with sea salt

then drizzle with the olive oil

mix everything up, and place on a baking sheet ( I line it, with parchment, makes for easy clean up)




Rosemary and Garlic Roasted Potatoes

1 kilo  bag of baby potatoes, quartered or halved, depending on size (you want them all to be about the same size)
4-5 cloves of garlic, minced
4 sprigs of fresh rosemary, taken off stem
 5-6 tablespoons olive oil
coarse salt
**** the amounts you use, end up being up to you, and then seasoned to your own taste

Preheat oven to 220/ 400°F
Rinse and dry the potatoes....then slice potatoes into  bite size pieces and place in a large bowl.
Toss the potatoes with the rosemary,, garlic, and salt
Next add the olive oil and toss the potatoes again to spread the oil evenly.
Place the potatoes on a baking sheet ( lined with foil or parchment), making sure that they are evenly distributed across the pan.
Roast in the oven for 35 minutes. Take out of the oven and flip the potatoes so that another side of the potatoes cooks. Place back in the oven for about 10 minutes more, or until crispy.
Remove from the oven and let cool for a few minutes.
