Peanut Butter Cups

Considering, today is the very first day Lent, these were perhaps something I should not have made today in my kitchen. But you know what they say about the flesh being weak, it is true. These are so over the top, in taste, my husband Mr.G a confirmed peanut butter cup addict, loved them, and my kids, well they are still jumping around, from the sugar high ! I did not make these "mini" as the orginal recipe suggest's, I made them in a regular, muffin tin of 12, I figure, bigger is better. They are really easy to make, which may prove to be a real problem. If, perhaps you are observing Lent, it was not my intention to tempt you in any way, you can always wait out the 40 days, and then make them....Good Luck with that !





Peanut Butter Cups    found here

1 cup creamy peanut butter
¼ cup  butter
¼ cup light brown sugar
1¼ cups powdered sugar
2 tablets of chocolate (200g each)
¼ cup butter


1. Line a muffin tin with paper liners; set aside.
2. In a bowl combine the peanut butter, butter and brown sugar. Heat in the microwave until completely melted and starting to bubble a little. Add the powdered sugar , stirring until completely combined with the peanut butter mixture . Set aside and let cool.
3.Next melt the chocolate and butter together in the microwave, in 30-second increments, until completely melted, stirring  a little after each time.
4. Using a small teaspoon, spoon melted chocolate into the bottom of each lined muffin cup.
5. Use a heaping teaspoon to scoop out the peanut butter mixture. Roll it into a ball, and then flatten it slightly into a disk.
6. Place a peanut butter disk on top of each chocolate-lined muffin tin. Then use a  spoon to add more melted chocolate on top and around each peanut butter patty.
7. Refrigerate for 30 minutes, to harden chocolate.
