Peach Kuchen

Peach what ?? Kuchen, is the german word for cake. This is a lovely little dessert, really easy to make, not overly sweet, just perfect with a cup of tea. It has a nice crust, similar to a cookie, and the filling is very creamy almost like a cheesecake. Don't be scared off by the pictures, I promise it's easy peasy.



















  • CRUST:
  • 1 cup all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • FILLING:
  • 1 can (large can) peaches, sliced and drained
  • 2 eggs
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 1 cup (8 ounces) sour cream

Directions

  • In a small bowl, combine flour, confectioners' sugar and salt. Cut in butter to form a dough. Pat lightly into an ungreased small baking dish/ pan.
  • Arrange peaches over the crust; set aside. In another bowl, beat eggs. Whisk in the sugar, salt, flour and sour cream until mixture is smooth. Pour over the peaches.
  • Bake at  220/450° for 10 minutes. Reduce heat to 170/ 325°; bake 35 minutes more or until center is set. Serve warm or chilled. Store in the refrigerator.
