Ham and Cheese Sliders

Image
Ohhhhhhhhh Man, these are trouble ;) I have seen this recipe pop up all over the net, the first time I saw it was here , I saved it right away, so that I could try it out, on my family. Well, I made them last night, dinner was a little blaaah, yes that does happen around here ! Well they were a big hit, so nummy yes that is a word, somewhere, one of those little gems you can put together quickly, for watching a soccer game on TV, or perhaps for a night of poker, even a birthday party. The only thing you may decide to leave out, are in fact the poppy seeds, my kids don´t really care for them, as my son say's : " all they do is get stuck in your teeth mom". He may indeed have a point, there. Next time I make these, I will buy a cheese that melts is ooey gooey better, perhaps, havartti, or even mozzarella. The mustard sauce, is really good, I have some plans already for it, perhaps on ribs or a burger. So you see, you have got to make these, it's the weekend, inv...

Porridge

Image
"Once upon a time, there lived a family of bears in the forest. There was great big Papa Bear, medium sized Mama Bear, and little Baby Bear. One day, Mama Bear cooked a pot of porridge as breakfast for herself, Papa Bear and Baby Bear. The porridge is very hot so the three bears decided to go strolling in the woods for a while until the porridge cooled down." If you have ever read this story, you know that, soon after the bears leave, Goldilocks, comes around, and eats up their porridge. In our home, I make oatmeal for my hubby ginger locks Mr.G.  This is one of his favorite breakfasts, sprinkled with raisins on top. It is so easy to prepare, and can be changed up, with so many different fruits. You can make them with only water, if you prefer, I like to use all milk, just gives them a creamier texture. I hope you give them a try. 1 cup of oats 2 cups of milk add honey and salt to taste cook over medium heat stirring till thick, about 3 to 4 minutes ...

Shrimp in a Spicy Vodka Sauce

Image
This shrimp dish was sooooooooo good. My husband absolutely loved it, he said it was a 9 out of 10 yes he will do that, rate a new recipe I try, he mostly does it to bug me, especially when he says, a meal is an 8 :) . It has a bit of a kick to it, you could adjust that by using less chilli flakes/hot sauce. But around here we don't mind hot food, it just means you can wash it down with some more "vino". Considering Valentines day, is just around the corner, I think this would make a fantastic dinner for two. Served with this salad, some garlic bread, a little wine........... you can see where I am headed with this. Try it, you won't be disappointed. Shrimp in Spicy Vodka Sauce Ingredients 2 tablespoons olive oil 2 cloves garlic minced ( I used WAY more) 1/2 cup vodka 1 (14-ounce) can crushed tomatoes ( I used a jar of plain tomato sauce) 1/2 cup heavy cream 1/2 teaspoon red pepper flakes/ tabasco  to taste Salt and freshly ground black pepper 1/2 p...

Hot Toddy

Image
I have been feeling under the weather, I believe it's the flu. My sweet uncle Alberto, swears by this concoction. He is almost 80, God bless him, and he has this drink in the evening, even when he doesn´t have the flu. So I figured I had nothing to loose. I prepared it just before, going to bed. Well let me say that I was out like a rock, all night long,  I slept for almost 14 hours ! Now I can´t say it has cured my cold, but it sure as heck, hasn't made it worse.  Hot Toddy 2 ounces Whiskey ( I used Rum) 2 tablespoons honey some lemon peel 1 cinnamon stick boiling water Place the whiskey, lemon peels, honey and cinnamon stick in a mug, and pour the boiling water over, to fill to the top of the mug. * you can add everything to taste, want more whiskey, go for it......like more honey add some more.  you can also add other spices, cloves, nutmeg, aniseed etc. This is your little magical potion, prepare it however you like it. xo, Diana

Quiet

Image
"theres no tragedy in life like the death of a child.Things never get back to the way they were." D. Eisenhower I have been very quiet lately, I am sad. Some very dear friends of our's, have lost there beautiful baby, Alice, to stillbirth. My heart aches for them both. I have been uneasy since we found out, my mind seems to be racing all the time, and I know all to well, why. Hearing their news, has sent me into a spin, a nose-dive of sorts, opened up a wound, I am left to think of all that happened to us when our Emma died. I just want to pick up my friend C., and hold her real tight, and tell her everything will be okay. Even if, to get to okay, it takes many years. I am praying for her, and her husband, they are about to start a very, long , tough and lonely journey. They will never be the same again, they will be changed by this.........I know we were. xo,Diana
