Peach Cobbler
Bought some lovely peaches the other day, and I knew exactly what I wanted to do with them....bake a peach cobbler. The weather has been very cool this week, almost fall-like...sigh. Thats perhaps why, this cobbler hit the spot.

Topping

- Preheat oven to 200/375.
- Combine all the filling ingredients, mix well, and put into a buttered pyrex baking dish. Or, use individual ramekins to make individual cobblers.
- Make topping. First, combine all dry ingredients. Then cut in the butter to resemble coarse meal using your fingers or a fork.
- Add cream and mix until moist. Spoon out on top of filling. Sprinkle the biscuit generously with granulated sugar and cinnamon
- Bake in oven until top is golden brown, about 40 minutes. If you used a glass pyrex, you will also see the fruit bubbling.
- Serve warm topped with whipped cream or ice cream.
