Ervilhas Guisadas Com Ovos Escalfados ( Braised Peas with Poached Eggs )
This is for me, one of my favorite Portuguese dishes, hands down, total comfort food ! It is the perfect combination of sweet peas, savory sausage, and poached eggs. Not convinced yet....there is also an amazing sauce, perfect for soaking up with some bread. This is one of those portuguese dishes, where mom´s or grandmother´s "eye-balled"( or like I say used the force) all the ingredients to produce a wonderful meal. I believe everyone who is Portuguese has "the" recipe for these, adding their own spin to it. This is the way I make it for my family, and yes I do "use the force", but this time I actually measured out everything ! This is not complicated food, it is simple food, and simple is a beautiful thing!
¼ cup olive oil
1 linguiça or chouriço sausage ( portuguese), sliced
2 small onions, finely chopped
1 to 2 cloves garlic, finely chopped
3-4 bay leaves
7-9 whole allspice corns
1 cup plain tomato sauce
1 cup white wine
2 cups hot water ( or chicken broth)
1 tablespoon of sugar
1 bag of frozen peas ( 1 kilo)
eggs ( 1 per person or 2)
salt
Heat the oil in a large pot/saucepan. Add the sausage slices, rendering, and browning lightly, next add the onions, garlic and bay leaves, and allspice. Saute the ingredients for about 4 minutes over medium heat, or till onions are soft.
Pour in the, tomato sauce,wine and hot water, and stir. Bring the ingredients to a boil over medium-high heat. Mix in the peas and sugar cover tightly and reduce the heat to medium-low and simmer for about 20-30 minutes.
With a large spoon, make a well in the peas for each egg. Crack the eggs into each hole. Cover the pan and continue to simmer for about 5 to 10 minutes more to softly poach the eggs to your desired doneness. Adjust the seasoning but adding salt if you wish.

- this makes a large pot of peas, enough for my family of five, and some leftovers
- you can saute some bacon along with the sausage
- you can add baby carrots along with the peas
-fresh peas can also be used
- don't like peas, use fava beans, or green beans
-like a spicy dish, add some heat, pirri pirri or sriracha
