Baked Spinach and Artichoke Dip

I will warn you right now, this is a very addictive little recipe! It is a great appetizer, that wil have everyone fighting over the dish. With that said, this is however not very diet friendly, unless of course you consider the generous amount of spinach, and artichokes, both of which are vegetables! Any of the dairy products, could be replaced with lite/low fat options, without a hitch, if you wish.














1 can of artichokes (drained and chopped)
2-3 blocks of frozen spinach (thawed and drained) or more
1 small packge grated parmesan cheese ( about 1 cup)
1 bag of shredded cheese ( to your liking)
1 package cream cheese
1 small jar of mayonaise (or about 1 cup)
2-3 minced cloves of garlic
salt and pepper to taste
chili flakes to taste


In a bowl, add the mayonaise, cream cheese, parmesan cheese, shredded cheese, and minced garlic, give everything a quick mix.
Next add in the chopped, well drained artichokes, and the thawed, chopped, well drained spinach.
Again give everything a really good mix up. Taste for seasonings, salt or pepper, or some chili flakes. This is your dip, season it however you like !

Next, place everything into a baking dish and :
a) bake in the oven 180º/ 350 for about 20- 30 minutes..or until golden and bubbly
b) microwave till bubbly a creamy ( this is quicker, BUT, I find it alot more greasy)

****this is also great in a bread bowl, bake in the oven, the same way, toasting the bread you scoop out!

  2. Adoro alcachofras. Já as fiz como acompanhamento de carne, salteadas em azeite e alho. Costumo comprar a mesma marca que aí tens. São avinagradas. Tão boas. Este apettizer promete mesmo ser uma tentação, apesar das calorias, mas em dia de festa estas não se contam. Temos de aproveitar o que a vida nos dá. Certo?
    Que tenham umas festas felizes e que 2013 chegue repleto de saúde, otimismo e crença no futuro. O resto virá por acréscimo.
