Rosette Cookies

Image
A friend of mine asked me for this recipe today, I could have sworn it was on the blog already, but I was mistaken. These are a lovley fried cookie, they are crispy, light and barely sweet. Their sweetness comes from the powdered sugar that is sprinkled on them. They are ever so pretty, I can´t help but smile when they are all finished, and placed on a platter. You probably have all the ingredients in your kitchen right now, there is a catch though, you need a special shaped iron to make them. The irons come in all shapes and patterns, and are easily found online. Typically these cookies are made for Christmas, but I always tend to make them for Carnaval. That just so happens to be this weekend for us, Lent is just around the corner, so now is a great time to make these ! Thanks Anita for reminding me, to share this on the blog ! 2 eggs 1 teaspoon sugar 1/4 teaspoon salt 1 cup milk 1 cup flour Oil for frying; Beat eggs slightly with sugar and salt. Add milk and flour, the

Shrimp and Avocado Salad

Image
Please tell me I am not the only one dreaming of summer? Anyone ? Sitting out on the patio, the kids in the pool, Mr.G grilling some steaks, and in the garden lots of fresh yumminess growing ! I was craving something fresh with summertime flavors. This salad hit the spot ! It is a super fast and easy meal with no cooking required! It looks and tastes like a million bucks. The creamy richness of avocado pairs perfectly with the sweet flavor of the shrimp. This salad gets a kick from fresh lime juice which gives it plenty of extra tang and the cilantro adds some freshness. I added some jalapenos, only because I had them, next time I would be tempted to add some corn, and maybe some mango. If you are tired of winter, like me, you won't regret making this salad, while your at it make some Margaritas too ! 500grams cooked shrimp; chopped 1 medium tomato; diced 2 Avocado; diced 1small red onion; chopped 2 small limes; juiced 1 tablespoon olive oil 1 tablespoon cila

Sesame Noodles

Image
This is one of my very favorite things to eat, sesame noodles, I love it better than  chocolate . It is easy, and can be thrown together really quickly. The sauce is light, a little bit sweet, and a little bit spicy. All you have to do is cook the pasta, whisk together the sauce and Voilá your done ! I like to use rice noodles, but you can use any pasta you like. It's perfect for a late night snack  dinner after a long day of work. You can add chicken or beef or even shrimp if you like, or crunchy sugar peas. I hope you give it a try !  1 package rice noodles/ or pasta 1/4 cup  soy sauce 2 tablespoons sugar 2 cloves garlic, minced 2 tablespoons sesame oil 1/4 teaspoon crushed red pepper flakes 2 tablespoons olive oil 3 green onions, sliced toasted sesame seeds Cook rice noodles/ or pasta according to package directions. Reserve 2 tablespoons of the water before draining. Meanwhile in a large bowl add soy sauce and all other ingredients except onions. S

Old Fashioned Jelly Roll

Image
We are still in the depths of winter, and the island has been grey and windy. Today it rained all day, and I have been dreaming about summer. Right now the only thing close to summer, is the many jars of jam and jelly I have in the hutch in my kitchen. I went looking through the jars today, and way in the back, found a jar of grape jam. It made me really happy, funny how a jar of jam can do that, it reminded me of late August, and it's lazy afternoons. I decided to bake something, I haven't made in a very long time..in fact way too long, a simple jelly roll. It turned out lovely, warmed up the kitchen, and put some smiles on our faces. 3/4 cup flour 3/4 teaspoon  Baking Powder 1/4 teaspoon salt 4 eggs 3/4 cup granulated sugar 1 teaspoon vanilla 1 cup Jam  - flavor is your choice, ( I used grape) confectioners' sugar/ or sugar Instructions: Mix together flour, Baking Powder and salt. In a small bowl beat together eggs and sugar until well mixed and

Crock Pot Pulled Pork

Image
This is another one of our favorite meals at our house ! It is super easy to make, requires 3 ingredients, and a crock pot ! If you start it in the morning, by the time everyone is coming in the door, dinner will be ready. I have not  added a specific weight for the pork, because that really depends on the size of your crock pot. I like to serve this with coleslaw, and mac and cheese. It  is great in the winter for comfort food, but lovely in the summer, when you don´t want to go near the stove ! Try using a really good BBQ  sauce, as it is the only other ingredient of 3 . If you would prefer to add some spices, go for it, it certainly wouldn't hurt. I hope you give it a try ! Ingredients 1 Pork shoulder roast/ pork loin/ pork tenderloins 1 can of Dr. Pepper/ root beer/ coca cola 2 cups of barbecue sauce, one for now and one for later some splashes of liquid smoke ( if you have some ) Instructions: Place the pork roast in your Crock Pot. Pour Dr. Pepper on top,

Strawberry Chocolate Chip Cookies

Image
With Valentine´s Day just around the corner, these cookies are sure to be a hit. I baked these this morning, while the kids were at school and Mr. G at work. They are fantastic, and really, really easy to make. They are made with the use of a box cake mix, how cool is that ?  They would be  great to bake with the help of little hands, and in less then 30 minutes you have some yummy cookies. Well sure enough as soon as everyone came home, the cookies started to disappear, as I finish posting this, I believe there are only five left ! A sure sign, they are  delicious, hope you give them a try. 1 Strawberry Cake Mix, I used Duncan Hines 1 teaspoon Baking Powder. 2 Eggs. 1/3 Cup Vegetable Oil 1/2 TSP Vanilla 2 Cups White Chocolate Chips DIRECTIONS Preheat oven to 180//350. Line a Baking Sheet with Parchment Paper (the paper will keep your cookies from spreading). In a small bowl whisk eggs, oil and vanilla Set aside. In a medium bowl mix together cake mix an
