Brazilian Carrot Cake

 I love the simplicity of this recipe, with very few ingredients it is a keeper in my books. Brazilian Carrot Cake is a popular cake in Brazil, it’s different from the American carrot cake recipes. This has no addition of spices, it is just made with carrots, that are blended not grated with the other ingredients. It is rich in flavor, has a wonderful fluffy texture and is coated with a delicious chocolate sauce.











4 medium carrots, peeled and roughly chopped

4 eggs,
1 cup canola oil
2 cups sugar
1 pinch salt
2 1/2 cups flour
1 tablespoon baking powder

chocolate sauce
4 tablespoons cocoa powder
6 tablespoons  sugar
3 tablespoons butter
3 tablespoons milk
1/2 teaspoon vanilla extract

Directions:
 for the cake
Heat oven to 350F/180 C  Put eggs, carrots and oil in a blender. Blend on high for about 2 minutes or until there are no more big pieces of carrots left. Add sugar and salt and blend until well incorporated. Add 1 cup of flour and blend on low speed until incorporated. Add the rest of flour and the baking powder and blend again on low speed just until the batter is smooth. Don't over mix. Pour mixture into a greased  cake pan and bake for approximately 50 minutes or until a toothpick comes out clean when inserted in the cake. Allow the cake to cool for a bit, then flip it onto a serving platter while still warm.

Put all the ingredients in a small saucepan over medium heat.
Whisk it all together until it comes to a boil and the mixture is smooth.
Pour it over the cake while both cake and sauce are still hot.
